Place oven rack on second level from the bottom in oven. Preheat the oven to 500 degrees F. (Tenderloin is also excellent when cooked on the grill.)
Ingredients:
1 Pork Tenderloin (approx. 2 pounds)
1 cup Canyon Foods All Fired Up! Grilling Sauce
Marinade:
1/2 tsp. Minced Fresh Garlic
1/2 tsp. Salt
1/4 cup Balsamic Vinegar
1/2 tsp. Black Pepper
1/4 cup Strong brewed coffee or espresso
Coffee Rub for Pork:
1 tsp. Minced Fresh Garlic
1/2 tsp. Salt to taste
1 tsp. Pepper to taste
2 Tbsp. Olive Oil
3 Tbsp. Coffee Beans freshly ground into large pieces
Mix all ingredients together to make a paste.
Making the Pork Tenderloin: Pour marinade over the pork tenderloin and marinate for 1 to 2 hours in the refrigerator. Remove the pork tenderloin from the marinade (throw the marinade away). Rub the tenderloin with the coffee rub and coat evenly. Place tenderloin in roasting pan and cook approximately 10 minutes on each side. Pork needs to cook to an internal temperature of 145 and should be slightly pink in the center when done. Pork should never be served rare or medium rare. When the pork is done remove from the oven and place on clean cutting board. Scrape off excess coffee beans. Slice into 1/4 inch thick slices. Top with grilling sauce and serve additional sauce on the side. Leftover pork tenderloin makes excellent sandwiches the next day.
