Tomato Coriander - Grilled Lamb Bites with Greek Yogurt Salad

3/4 Fage Whole Milk drained Greek Yogurt
3/4 Chef McMillans Tomato Coriander Dressing
1-2 Tbsp Honey
1/2 tsp Salt
1/2 tsp Black Pepper
1 Large Red Onion
1 Lb. pacakge of Arugula or of loose bulk arugula cleaned and picked through
Lemon Juice to taste
6 Pieces of Lamb Bites available at the Butcher Counter
Chef McMillans Tomato Coriander Dressing
Steak au Poivre Salt

Sliced thin onion and cooked slowly in a bit of oil and butter till brown and sweet. The browner it is, the sweeter it is! Set aside. Lightly coat lamb bites with Tomato Coriander dressing. Sprinkle liberally on all sides with Steak au Poivre salt. Saute or grill to desired temperature. Let rest for 10 to 15 minutes before using. Toss arugula with 1/2 cup of Chef McMillans Tomato Coriander and yogurt dressing. Taste and adjust seasoning with lemon, salt and pepper. Lay dressed arugula out on a platter. Place the lamp on the arugula. Scatter the onions around and drizzle all with a bit of the dressing.
