Chef Dean Fearing of The Ritz Carlton has worked exclusively with Canyon Specialty Foods to produce these gourmet tamales in an approved USDA facility. Tamales are small packages of corn masa dough containing a variety of fillings and rolled in a dried corn husk. Tamales are quickly becoming one of Americas favorite wrapped foods. They are especially popular during the holiday season in Texas and the southwest.
Following is some helpful information on serving your tamales.
The shipping container should be opened immediately upon arrival and tamales placed in the freezer.
Tamales should arrive cool to the touch or colder.
The Diablo, Poblano, and BBQ sauces are shelf stable and may be placed in the pantry until opened.
Poblano Cream Sauce is perishable and should be kept frozen for extended times or refrigerated up to 30 days.
Packaging items may be thrown away. Use caution and do not touch dry ice with bare hands.
Keep small children away from packing materials.
